Preparation process

  1. Prepare the cuba seasoning mixture: mix 1/2 tsp . saffron, 1/4 teaspoon cardamom, 1/2 tsp cinnamon, 1/2 tsp cloves, 1/4 tsp pepper and 1/4 tsp ground coriander.
  2. Rub the chicken breast with olive oil, add salt, pepper and 1/2 tsp. Cuba seasoning mixes.

  3. Cook the chicken on the grill or in the oven, periodically turning, until cooked.
  4. Rinse the rice well and soak in cold water for 20 minutes. Drain the water.
  5. In a deep frying pan, melt the butter, add the grated carrots and raisins.
  6. Add turmeric, a portion of the chicken stock, bring to a boil, then reduce heat and simmer for 15-20 minutes over low heat.

  7. Prepare a mixture of fragrant herbs and spices of baharat Mix 1 tbsp. l black pepper, 1/2 tbsp. l coriander, 1/2 tbsp. l cinnamon, 1/2 tbsp. l ground cloves, 1/2 tbsp.

    l caraway seeds, 1/2 tsp. cardamom, 1/2 tsp chopped nutmeg, 1 tbsp. l paprika.

  8. Make homemade tomato sauce: mix chopped tomatoes, tomato paste, salt, pepper, olive oil, caraway seeds, sesame paste, garlic and 1/2 tsp. Baharat mixtures (see previous paragraph)
  9. Simmer the tomato sauce over low heat, stirring occasionally.

    Add chicken stock if necessary.

  10. Serve rice with chicken and homemade tomato sauce. Bon appetit!
