Salmonellosis: how to cook eggs in order not to get sick

Despite the fact that there are quite a few ways to get infected with salmonellosis - animals and, therefore, livestock products transmit infections, everyone is used to associating this disease with raw eggs. We decided to figure out how to cook eggs properly so as not to get infected.

Salmonella - these are bacteria that are on the inner surface of poor-quality eggs. Due to bird droppings on the shell, the infection can enter the egg. Salmonellosis is a dangerous disease, it affects about 19 of the gastrointestinal tract, and can also affect the liver, kidneys, and kidneys.

Symptoms of salmonellosis are manifested in dehydration, fever, weakness, headache, nausea, diarrhea, vomiting, and abdominal pain. That is why you should not eat raw or undercooked eggs - there is a high risk of infection.

Salmonella can be detected in eggs only in laboratory conditions. According to GOST, the shelf life of eggs at a storage temperature of 0-25 degrees

is

25 days from the date of sorting.

Since not all eggs are labeled, it is better to check them at home, namely, lower them into a container with cold water. A poor-quality and stale egg will rise with a blunt end up and roll over, and very old eggs will float altogether.

Centers for Disease Control and Prevention recommend following certain rules for the selection, storage and processing of eggs:

  • buy pasteurized eggs;
  • keep eggs in the refrigerator;
  • throw cracked or dirty eggs;
  • only eat fully cooked eggs. Exclude soft-boiled eggs and fried eggs with liquid yolk. Egg dishes should be cooked at a temperature of at least 70 degrees;
  • store eggs in a special container.

    This is due to the fact that the infection can also affect neighboring products and the walls of the refrigerator;

  • do not try unroasted scrambled eggs and do not lick the spatula during cooking;
  • wash your hands and the appliances with which you cook. Worktops, cutting boards are no exception.
