Spelled salad with pumpkin and halum

Very hearty and bright salad with healthy cereals, baked and fresh vegetables, cheeses, herbs and garlic mustard dressing.

Ingredients

Spelled (boiled )

1,5 cups

Cilantro (freshly chopped)

1/2 cup

Parsley (fresh chopped)

1/2 cup

Cheese (feta chopped)

1/4 cup

Oil (olive )

1/4 cup

Syrup ( topinambura)

1 tsp

Cooking process

  1. Preheat the oven to 180 degrees.
  2. Cut the pumpkin into small segments, halumi into cubes, and cut the onion in half.
  3. Cover the baking sheet with baking paper, put the cut products on it and bake for 20 minutes.
  4. Cut the apple into small cubes, carrots into thin strips using a vegetable cutter.
  5. In a salad bowl, mix chopped apple and carrot with boiled spelled, herbs, walnuts and pomegranate seeds.

  6. For dressing, mix olive oil, minced garlic, mustard and Jerusalem artichoke syrup.
  7. Add baked halumi and chopped baked onions to the salad bowl. Pour dressing.
  8. Serve the salad with slices of baked pumpkin, sprinkling each serving with feta cheese on top.
