Cooking process

  1. Cut the tofu into cubes and marinate in soy sauce for half an hour, and then fry in olive oil with two parties.

  2. Peel the sweet potato and cut into cubes about 2 by 2 cm. Put on a baking sheet, pour olive oil, salt and bake in the oven at a temperature of 200 degrees for 35-40 minutes.
  3. Prepare a honey dressing: for this, mix with a whisk 50 g of flower honey, 35 ml of olive oil and 15 ml of lemon juice to a uniform consistency.
  4. Cut the tomatoes into slices and the cherry into halves.
  5. In a salad bowl, combine spinach, corn, both types of tomatoes, half boiled lentils.

    Pour over the dressing (leaving a little for the remaining lentils), salt and gently mix, without damaging the leaves of the salad.

  6. Put the salad in deep plates.
  7. In the same bowl where the salad was mixed, put the remaining lentils. Salt, add a little dressing, mix and transfer into plates with salad.
  8. Top with fried tofu and baked sweet potato.

    Garnish with cress if desired.
