Burger with salmon and cilantro cream
Light (but high-calorie) burger with spicy fishcake, slightly pickled fresh cucumber and sour cream and cilantro sauce.

Sprinkle the salmon fillet with salt and bake in the oven at a temperature of 180 degrees within 10-15 minutes.
Grind fresh lemongrass and ginger to a paste.
Add lime juice, 1/4 cup sour cream and mix again.
Disassemble the cooled salmon filet into small pieces and mix with the prepared ginger sauce.
Form small cutlets from the minced meat and fry them in a pan for 3-4 minutes, so that they stick together.
Combine water, vinegar and honey in a bowl.
Cut the cucumber into long strips and marinate in the vinegar-honey mixture for 5 minutes.
Finely chop the cilantro and mix with the remaining sour cream.
Cut the buns along and collect the burger: grease half the buns with cream of sour cream, then put the patty and pickled strips of cucumber. Top with the other half of the bun.
