  1. Prepare the sauce: chop 600 g cashews, 12 g garlic, 12 ml ginger fresh, 4 l juice in a blender lime, 4 g peppermint and 4 g basil until smooth.

  2. Wash the sweet potato well, cut in half and wrap in foil, adding olive oil. Bake until cooked at 180 degrees.
  3. Put the baked sweet potato on a plate, pour vegan sauce with cashew sauce, add corn kernels and avocado on top, sliced ‚Äč‚Äčinto equal medium-sized cubes.
  4. Garnish with herbs seasoned with Ponzu sauce and sprinkle with pistachios.
