Quiche is a classic French open pie. The main thing in it is shortbread dough and cream and egg filling, and you can experiment with the rest of the ingredients. There are hundreds of recipes for this pie, but today we stopped at three of our favorites: with caramelized onions, asparagus and mushrooms.

Preparation process

  1. Put on parchment 9 tbsp. l butter and put them in the freezer.
  2. Melt 1 tbsp. l butter in a pan and fry on it over low heat onions until caramelized state for about 40 minutes.
  3. Add chopped garlic and cook for another 5 minutes.

  4. Mix flour with frozen butter in a blender. Add ice water and mix again.
  5. While the onions are cooling, put the dough in a round baking dish and tamp tightly, forming the sides.
  6. Mix eggs, cream and pepper in a blender.
  7. Put chopped tomatoes, caramelized onions and grated parmesan on the dough.

    Pour in all the egg mixture.

  8. Bake for 35-45 minutes. Serve with fresh green onions.

There is nothing superfluous in this pie - only crispy shortcrust pastry, creamy egg filling and asparagus.

Cooking process

  1. Mix flour, oil and salt with your hands in a large bowl.

    Add water, knead the dough and form a ball out of it.

  2. Put the dough in the refrigerator for an hour.
  3. Divide the chilled dough into two parts. Roll and put into two round shapes with a diameter of about 18 cm.
  4. Make a fork with punctures in the dough.

    Bake the base for 10 minutes at a temperature of 180 degrees.

  5. Place the asparagus evenly on baked bases.
  6. Mix the eggs and cream in a blender and pour the two stems with this mixture.
  7. Bake the quiche for 30 minutes at a temperature of 180 degrees.

Cooking process

  1. Combine flour, salt, cold butter and yogurt to a state thick dough.
  2. Cut the mushrooms and onions into small pieces and fry with nutmeg in olive oil for 5-10 minutes.
  3. Dip the spinach in hot water for a minute.

    Drain and rinse the leaves under cold water.

  4. Mix spinach with mushrooms and onions.
  5. Roll out the dough and put into a mold with a diameter of 20-25 cm.
  6. Bake the quiche base for 10 minutes at a temperature of 180 degrees.
  7. Mix eggs, sour cream, milk, parmesan and herbs in a blender.

  8. Put the mushroom mixture in the prepared base, add the grated cheddar cheese and pour the whole egg mixture.
  9. Bake the quiche for 40 minutes at a temperature of 180 degrees.
