It seems that boiled eggs are the simplest dish in the world. But in practice, difficulties arise: either the eggs were not cooked, the shell is not peeled, or, on the contrary, cracked during cooking. Follow our tips - and boiled eggs will be perfect.
Wash the eggs under the tap to remove any residue. For better cleaning, use a brush and detergent.
Pour water into the pan and place on the stove . Turn the heat to maximum and wait for the water to boil. If you dip the eggs in cold water, they will not clean well: n getting warm with the water, the egg white is prepared slowly and firmly adheres to the inner shell.
Gently submerge the eggs in water. If you throw them, the shell will crack and the protein will leak into the water.

To to get perfect hard-boiled eggs with elastic protein and tender yolk, turn down the heat 30 seconds after the start of cooking and continue cooking for another 10 minutes. After this time, the yolks begin to dry, a blue-green rim forms between the yolk and the protein (the sulfur contained in the protein reacts with the iron in the yolk - iron sulfide is released, which slightly stains the yolk).
If you need soft-boiled eggs, cook them for 4-6 minutes.
So that the eggs are well cleaned, they need to be cooled. Hold the boiled eggs in cold water for 15 minutes. After this, the shell will move away from the eggs in almost a single layer.
