Preparation process

  1. Grate the carrots on a grater. Transfer to a bowl, season 1 tbsp. l lemon juice and 1 tbsp. l olive oil, season with cumin and mix.

  2. Prepare the dressing: mix in a blender 2 tbsp. l lemon juice, 2 tbsp. l olive oil, Greek yogurt, garlic, green onions, peppermint and basil.
  3. Hard-boiled eggs, peel and cut in half.
  4. Rub the beets on a grater.

    Cut the radishes into thin circles, and the tomatoes into slices.

  5. Place the carrot mixture, beets, lettuce, radishes, tomatoes and half the eggs in the plates. Add a little dressing on top and serve.
