  3. Combine the rice with the fried onions in a saucepan, increase the heat and fry the contents for about a minute. Pour in the wine and stir until it is completely evaporated.
  4. Add a little broth, continuing to stir the rice constantly.

    It should become soft and resemble a creamy consistency - it will take 20-30 minutes.

  5. Add the contents of the blender, grated parmesan and your favorite seasonings to your pan. Turn off the heat and let it sit for a few minutes. Risotto should thicken.
  6. Arrange the dish on plates, garnish with pea shoots and drizzle with olive oil.

  6. Pour the soup into a saucepan, add the deferred vegetables and chopped mint. Stir and season to taste.
  7. Pour the soup into plates and serve with crispy bread.
