  1. Heat the broth in a saucepan.
  2. Cut the bacon and fry in another pan until crisp.

    Set it aside.

Preparation process

  1. Cut the onion into thin half rings.
  2. In a large frying pan, heat the oil and fry the chopped onion on it for 15 minutes. Reduce the heat to near minimum and continue to caramelize the onion for another 40 minutes, stirring constantly.

  3. Increase the heat to medium. Slice the mushrooms and add to the onion. Simmer for about 10 minutes until mushrooms are tender.
  4. Add chopped garlic and thyme. Cook a couple more minutes, stirring constantly.

  5. Add wine and broths. Bring to a boil. Reduce heat and cook for 45 minutes. Salt, pepper and remove the branches of thyme.
