Cooking process

  1. Wash the chicken. Pour cold water into the pan (5 l of water per 1 kg of chicken) and bring to a boil. Remove the foam and let the chicken simmer over low heat.
  2. Fry the chopped onions and carrots in a dry pan.

    Add vegetables to the broth and simmer for an hour.

  3. Strain the broth. Separate meat from bones and skin and divide into fibers.
  4. Cook the noodles. Knead the dough from flour, chicken eggs and olive oil until smooth.

    Wrap in a film and put in the refrigerator for 20-30 minutes. After that, roll out the dough with a rolling pin to a thickness of 2-3 mm and cut with a knife into thin noodles.

  5. Put the noodles and chicken in a boiling broth. Cook for 3 minutes. Add chopped parsley, salt and pepper.

  6. Boil the quail eggs, cool and cut in half.
  7. Pour soup into a bowl and add quail eggs. Done.
