  1. Remove the mascarpone from the refrigerator 30 minutes before starting cooking.
  2. Peel the shrimp. Set aside the meat, and from the shells prepare the fish broth, adding onions, carrots and celery to it.

    Cook one hour after boiling.

  3. In a large frying pan, fry the well-washed and chopped leeks in olive oil. Add the chopped butter.
  4. Add rice and a glass of prosecco and continue cooking, adding fish broth as necessary.
  5. While the rice is cooking, fry the shrimp meat with minced garlic clove and olive oil in another pan over high heat for five minutes.

    Then add one glass of prosecco and cook for another five minutes.

  6. Transfer the shrimp and sauce to a rice pan. Add the fish broth as necessary until the rice is completely ready (this will take 20-30 minutes).
  7. 2-3 minutes before rice is cooked, season the risotto with salt and pepper, add the mascarpone and mix gently.
  8. Before serving, sprinkle the dish with finely chopped parsley.
